A word from your guide
Hello community, I'm Stéphane, a former physics and chemistry teacher and trainer with the French Ministry of Education, now manager of Couteaux de l'Isle in Villiers-Adam.
After several years devoted to promoting vocational training and helping young people develop in the world of work, I decided to leave the institution, noting that the system was still struggling to evolve in this direction.
My taste for manual work goes back to my childhood: I learned to work with metal and wood from my great-grandfather, a blacksmith, and my grandfather, a carpentry teacher. These family skills, passed on with patience and exacting standards, now feed my daily practice.
In my workshop, I combine this artisanal heritage with my studies in metal chemistry and my experience as a teacher: I accompany each participant with the same attention to detail and the same pleasure in transmitting. I design and make my own knives, but above all I offer courses where everyone can imagine and create their own. My work is based on two essential values: the search for human connection and respect for the environment, with a preference for sustainable materials and low-impact processes. Les Couteaux de l'Isle has thus become a place of creation, learning and authentic sharing.
Description of your future experience
Come and imagine, design and build your own fixed-blade knife!
As the day progresses, the knife you drew in the morning takes shape: metalworking, heat treatment at the forge, handle assembly and finishing. At the end of the day, you'll leave with a knife that looks just like the one you designed, and what's more, you made it yourself!
